Sweet potatoes are a local equivalent of Irish potatoes but with a lot more flavour! They are also known to be rich in dietary fibres, vitamins B5, B6, C and other minerals. They are sometimes confused with yams because their leaves look similar. Not only are they nutritious, but they are tasty in versatile ways. This recipe is a perfect, healthy and local substitute for cheesecake. It tastes just as good and is a clever way to encourage kids to consume their vitamins and minerals.

INGREDIENTS:

2-3 medium sweet potatoes

1 cup spiced water (cloves, cinnamon, nutmeg)

1 cup evaporated milk

½ cup sugar

1 tsp. vanilla essence

1 pie crust (9”)

METHOD:

Preheat oven to 350 degrees Fahrenheit.

Boil and dice sweet potatoes.

Blend together with other ingredients adding liquid as necessary.

Pour into crust.

Bake for 25 minutes.

Cool and serve with whipped cream or chocolate syrup, if desired.
